老字号“爆肚冯”

<p><font style="FONT-SIZE: 16px; FONT-FAMILY: 幼圆" color="#990000">&nbsp;<wbr>&nbsp;<wbr> “爆肚冯”是一家经营北京小吃的老字号。爆肚是将羊肚洗净后切成丝,下水抄一下迅速捞出。用芝麻酱,腐乳,辣椒油,香菜及细盐等作调料,佐餐芝麻小烧饼一起食用。</font></p>
<p><font style="FONT-SIZE: 16px; FONT-FAMILY: 幼圆" color="#990000">&nbsp;<wbr>&nbsp;<wbr>&nbsp;<wbr> 别看做法这么简单,可这里面却有很多技巧。羊肚要用热水抄,抄的时间短了羊肚没熟。时间长了羊肚就老了,放在嘴里嚼不动。就是那不短不长的时间,才使这爆肚吃起来口味香脆,又鲜嫩又有咬头。</font></p>

<p><font style="FONT-SIZE: 16px; FONT-FAMILY: 幼圆" color="#990000">&nbsp;<wbr> “爆肚冯”原开在前门大街西侧的廊坊二条,横穿门框胡同。门框胡同是一条南北的小胡同,胡同北从前门廊房头条经连廊房二条南到大栅栏。胡同不长也不宽,</font></p>
<p><font style="FONT-SIZE: 16px; FONT-FAMILY: 幼圆" color="#990000">&nbsp;&nbsp;&nbsp; 这么一个小小的门框胡同就有很多老字号的小吃店。如“复顺斋”的酱牛肉,(后迁到粮食店)“瑞宾楼”的褡裢火烧等。正是酒香不怕巷子深阿。</font></p>
<p><font style="FONT-SIZE: 16px; FONT-FAMILY: 幼圆" color="#990000">&nbsp;<wbr>&nbsp;<wbr>&nbsp;<wbr> 顺便说一下“瑞宾楼”的褡裢火烧,褡裢火烧是一种油炸食品。它的做法是把面团擀平后放馅折叠,两端上卷。放在平底锅中煎熟。长五寸宽一寸的长条状,很象旧时褡在肩上装东西的褡裢。故名之褡裢火烧。</font></p>
<p><font style="FONT-SIZE: 16px; FONT-FAMILY: 幼圆" color="#990000">&nbsp;<wbr>&nbsp;<wbr>&nbsp;<wbr> 褡裢火烧有三鲜馅,白菜馅。韭菜馅等,外焦里嫩。再用酸梅汤佐餐,开胃爽口别有风味。</font></p>

爆肚冯老店现在还在廊坊头条。经常去吃,晚上人很多,有时候要等坐,价格从15到30不等,量不大,但是味道没的说。个人认为比什刹海爆肚张味道好。但是贵些。
